The report shows that China's catering industry has achieved remarkable results in anti waste

Xinhua News Agency, Beijing, October 16 (Reporter Zou Duowei) The 2023 Annual Report of China's Food and Beverage Industry released by the China Hotel Association recently shows that in 2022, China's food and beverage industry will continue to implement anti waste measures focusing on production and service, and achieve remarkable results in reducing "waste on the tip of the tongue".

According to the report, in 2022, catering enterprises will carry out 11 common measures for the production link, including reasonable procurement, standardized storage, scientific catering, etc., and 8 measures for the service link, including daily publicity and training, giving proper order tips, and offering packaging services.

Specifically, in the production process, enterprises have shown outstanding performance in three aspects: "strengthening the management of food material procurement, storage and use, reducing waste and backlog", "effectively using leftovers of food materials, improving the yield rate", "providing some small dishes and small staple food options in the dining menu"; In the service link, the enterprise has shown outstanding performance in three aspects: "the conspicuous position of the restaurant carries out the propaganda to stop catering waste (such as posting posters and arranging table cards)", "the CD-ROM action, civilized table and other actions" and "providing public chopsticks and spoons".

In order to evaluate and reflect the effectiveness of anti catering waste, the report takes the change rate of food waste volume, the change rate of food waste treatment fees and the change rate of packaged lunch box use as quantitative indicators. The data shows that through a variety of ways, the amount of food waste of the enterprises participating in the survey has decreased by 11.2% on average, the waste disposal fee has decreased by 6.7% on average, and the use of packaged lunch boxes has increased by 11.7% on average. The series of actions against food waste have achieved remarkable results.

Since the promulgation and implementation of the Anti Food Waste Law more than two years ago, the central and local departments concerned have issued calls and initiatives to the whole society in various forms to practice strict economy and fight against waste. In March this year, the State Administration of Market Supervision and Administration deployed a three-month special action nationwide to stop catering waste.

Zhang Xiang, deputy secretary-general of the China Hotel Association, said that although China's grain output has been stable at more than 1.3 trillion kg for eight consecutive years, the current international situation is changing, and the situation of stabilizing production and ensuring supply is still complex and severe. To stop food waste cannot be a "gust of wind", but should be internalized as an important part of the daily operation of food and beverage enterprises, To further promote the green development of the industry.

Since the annual report of China's catering industry was released in 2009, it has played an important role in cultivating brands, setting a benchmark and providing services for enterprises to go public. This report is based on the survey data of more than 100 catering enterprises and groups in 23 provinces (districts, cities) in the mainland, covering business types such as dinner, hot pot, group meal, fast food, Japanese food, western food, tea, etc.
