Steamed noodles

When I was in primary school, the cook in the school canteen was a retired cook from the army, and our head teacher's husband.

Steamed noodles are only available in the menu on Wednesday or Friday. They are eaten once every two weeks.

The surface of steamed noodles in the canteen is not oily, and it looks a bit dry. Generally, steamed noodles are served with large bowls of cold porridge, and steamed noodles are mixed in the porridge, so that our group of primary school students can grunt through the two large bowls.

At that time, there was a magical phenomenon in cooking. Whenever we met steamed noodles, our boys' reports would obviously rise to a higher level: "Wang, three bowls", "Li, two and a half bowls". If you know that our tableware is a round enamel rice basin, you know how big it is.

Up to now, I don't know how to eat so much steamed noodles at the beginning. Sometimes it's not enough to finish eating. We will go to "play the second roll", that is, play a meal again.

Normally, steamed noodles are nothing more than a pot of softened noodles, mixed with pre fried beans and meat pieces, put seasoning ingredients, and steamed in a pot. There is nothing complicated, but I have never eaten steamed noodles like that in primary school since graduation.

The steamed noodles that can be eaten now are oily on the surface and can block the throat when eating. At the same time, the noodles used were also different from those at that time. At that time, the noodles were wider and thicker than wide noodles. Now, there are some cylindrical thin noodles, some "macaroni noodles", and some machine rolled soft noodles, which are not delicious.

Fried sausage

I remember the fried sausage in the old market. The sauce is slightly sour and sweet, but it is not particularly salty. After taking a bite, you will have a mouth full of oily sour and sweet food, which is just a flexible crispy casing and something similar to starch sausage.

The sour and sweet taste is very strange. It is not the pure sour and sweet taste of vinegar and candy, but a unique taste that can only exist in my mind. After so long, I have never tasted that taste again.

In the past two years, I have eaten all the fried sausages near the rental house, and I haven't found any taste of memory. In the fried sausages you have eaten, you can use whatever you like, such as starchy sausages, grilled sausages, enemas, and even battered moulded sausages; There are many sauces, such as sweet flour sauce, barbecue sauce, unknown compound sauce, and some fried sausages are too much, so it's better to sprinkle cumin and pepper directly.

These fried sausages are different from the ones in memory not only in sauce, but also in the taste of the sausage itself. I sometimes wonder if memory has beautified the old times? But after tasting, it seems that I can still feel the crispness and sweetness of my mouth, and the taste is not deceiving.

noodles with shredded meat

When I was young, I lived with my family who worked on the construction site. Every night, my father and I had a small bowl of shredded meat noodles and a small plate. My father picked some noodles from the bowl and put them on a small plate. This is my dinner.

I still remember the ingredients of shredded meat noodles at that time: the main character was noodles, the supporting actor was a small pile of shredded meat, plus a few pieces of vegetables.

Of course, this is not to say how poor the family was when I was young, but to illustrate one of its characteristics: large quantity.

How large is it? The big bowl of shredded meat noodles was put up in a cylindrical basin, which was more like a super large "bowl". Even for the construction workers, the large bowl of shredded meat noodles could not be eaten by one person.

If it's just a large amount, I may not remember it so deeply, but what impressed me was the unique taste of shredded meat noodles.

In my memory, except for the esterified fat and soy sauce, the shredded meat noodles have a very special taste, which is indescribable and can only be described as "thick".

The noodles are smooth in the mouth, the shredded meat is a little tough, and the soup is slightly salty in the mouth, but very thick. Every time we eat noodles, we even drink the soup clean.

In the past few years, I have also tasted some so-called shredded meat noodles. Some of them directly use shredded meat noodles with green peppers as shredded meat noodles, and some of them add some minced ginger, onion, fungus, carrots, etc., none of which is the same as what I ate when I was a child.

The nearest one is a small noodle shop in a village in the city. Its shredded meat noodles are a bit thick in memory, but the taste is very light and dissipates quickly. I ate half a bowl, and the back of my mouth was full of the fishy smell of flour, so I simply poured it out. Not to mention soup, which has no good taste except greasy mouth.

Roasted lamb liver

Roast mutton liver was encountered in college. The stall was in the market around the school, and the boss was a local aunt.

Aunt's barbecue stand sells everything, such as sausages and barbecues, but the only thing that students like is roast lamb liver.

Aunt's roast lamb liver has three characteristics: crisp, tender and juicy.

The shell of roast lamb's liver is crisp. After roasting, you can immediately bite your hand. The outer layer is directly disconnected under pressure, but it bounces back like a rubber band. The combination of Q spring and crispness makes you want to stop; After biting, you can feel the soft and fresh inside, tender but not fishy, and the taste is similar to egg custard; When you take the second bite, the roasted mutton liver will flow out rich juice, mutton oil mixed with seasonings, and the special taste of mutton liver, full of fragrance.

This National Day holiday, I wanted to go to the old place to visit again, but because of the epidemic, the travel plan failed again. Unfortunately, I have to look for another opportunity later. I don't know whether those old stalls are still as usual.
