According to the degree of fermentation, oolong tea can generally be divided into mild fermented tea (about 10-25%), moderate fermented tea (about 25-50%) and severe fermented tea (about 50-70%).

Mildly fermented Oolong tea is represented by Wenshan Baozhong tea and faint scent Tieguanyin tea. The fermentation degree of Wenshan Baozhong tea is the lightest among oolong tea, about 8-10%. The fire is also light, which is more similar to green tea and is unique in oolong tea.

Fragrant Tieguanyin belongs to popular light fermented oolong tea, with a fermentation degree of 15-20%. "Clear soup and green water" is the representative characteristic of the fragrant Tieguanyin.  

Compared with the traditional oolong tea with "green leaves and red rims" in Fujian, the "fragrance type" oolong tea has obvious "three green" characteristics: dry tea green, soup green, and green leaf bottom. After brewing, the tea has a lasting fragrance. The tea soup is bright and bottoming out. The mouth produces fluid, and the throat is smooth. The lingering charm is strong, and the tea is tender and sweet.

The "Luzhou flavor" oolong tea produced by traditional technology is generally heavy in fermentation and belongs to moderate fermentation, which mainly represents the traditional Tieguanyin, Wuyi Rock Tea, Minbei Narcissus and Guangdong Fenghuang Dancong.  

For example, the Oolong in the north of Fujian has a strong and tight shape, green brown and oily color, commonly known as "Baoguang". The soup color is deep orange yellow or orange red, showing golden circles. The leaf bottom is plump and soft. The flower and fruit fragrance is rich and long, and the taste is thick, mellow and sweet. Generally, the degree of fermentation can be as high as about 50%.

The heavily fermented Oolong tea is none other than Baihao Oolong tea. Baihao Oolong, also known as Oriental Beauty, is a unique famous tea in Taiwan. It is the most fermented tea among Oolong teas, with a general fermentation degree of 60%, some even up to 80%.

Its appearance is connected with branches and leaves, and the pekoe is exposed. The soup is amber, with honey or ripe fruit fragrance, and the taste is sweet and mellow.
