Gaoyou Lake hairy crabs are from Jiangsu ProvinceGaoyou CityGaoyou Lake is about 42 kilometers long in the north and 25 kilometers wide in the east and west of Hunan Province. Gaoyou Lake spans Gaoyou, Baoying, Jinhu and Tianchang in Jiangsu Province and Anhui Province.The total water area is 780 square kilometers. When the water level is 5.55 meters, the water area is 648 square kilometers, and the area of reed beaches and dams is 112.67 square kilometers.Gaoyou Lake is also a "suspended lake". Gaoyou Lake hairy crabs have been famous since the Northern Song Dynasty.Qin Guan, a local sage of Gaoyou and a graceful school of Ci, asked a special person to send his "Ode to the Yellow Mansion" to Su Shi, his teacher and friend who was in Xuzhou at the time, along with Gaoyou's local specialties of windfish, drunken crabs, and Gaoyou's double yellow duck eggs, and wrote a poem, "Send Youyuan, ginger fish, fermented crabs, send Youzi Zhan," in which he wrote: "The belly is filled with purple crab fat, and later the spring is filled with opium. First, the ginger sprouts are fatter than the meat."Qin Shaoyou specially selects purple female crabs with yellow, fat and thick crab shells, which are drunk in a bad sauce. There are also tender and smooth water shield and ginger sprouts of Feisheng meat in a bottle of opium poppy.[4]
By the end of 2015, the total output of crabs in Gaoyou City had reached more than 4000 tons, and the cultivation area was nearly 200000 mu, including 40000 mu of efficient fishery cultivation area of crabs.At present, there are 380 crab breeding and circulation operators, 20 farmers' professional cooperatives and 900 farmers.[5]

1、 Provenance
Eriocheir sinensis in the Yangtze River system.
2、 Breeding conditions
The water is fresh and pollution-free, meeting the national fishery water quality standards, with pH value of 7.0 to 8.5, dissolved oxygen ≥ 5 mg/L, transparency ≥ 50 cm, water depth of 1.5 to 2.0 meters, and water grass coverage of 40% to 60%.
3、 Breeding management
Source of crab species: the parent comes from the natural growth in the Yangtze River waters or is bred from the national original seed farm and Gaoyou Lake parent base;The big eye larva is bred by the designated Chinese mitten crab nursery;One year old crabs are cultivated from a designated breeding base into crabs with specifications ranging from 80 to 200 crabs/kg.
Culture method: purse seine culture.
Crab species stocking: from February to March every year, 80 to 200 crab species/kg will be put in, and the stocking density is 1.25 to 1.5 kg/667 square meters (mu).
Feeding: feed special brand granular feed for river crabs, small miscellaneous fish, clams, snails, corn, wheat, broad beans and various aquatic plants.
Breeding cycle: from the time when crab species are put into the market to the time when commercial crabs are caught and listed, the continuous breeding time within the range of producing areas is ≥ 6 months.
