As the prepared liquor is a kind of more complex liquor, its classification method is not uniform. The more general classification method is introduced below. [1]

Drinking time classification

  • Aperitifs
The aperitif is suitable for drinking before meals and has the effect of stimulating appetite. There are mainly three kinds of Weimeisi, Bite wine and Fennel wine.
The name of aperitif comes from the idea that drinking it before meals can increase appetite. There are many wines that can be used as appetizers. Whisky, Autodesk, gold wine, champagne, some grape wine and fruit wine are all good appetizers. The concept of aperitif is relatively vague. With the evolution of drinking habits, aperitif has gradually been specifically referred to as prepared wine with wine and some distilled wine as the main raw materials, such as Vermouth, Bitter, Anise, etc. These are two definitions of aperitif: the former generally refers to all alcoholic drinks that can increase appetite before meals, and the latter specifically refers to alcoholic drinks with appetizing function mainly based on wine or distilled wine.
  • Dessert Wines
Sweet wine should be mixed with dessert, such as sherry, porter, madeira, etc.
Dessert is the last dish in western food, which is usually dessert and fruit. The wine with Sasuke is also sweet, and it is often prepared based on wine. However, it is obviously different from liqueur. Although the latter is also a sweet wine, its main liquor base is usually distilled liquor. The main producers of dessert wine are Portugal, Spain, Italy, Greece, Hungary, southern France, etc.
  • Liqueurs
Liquor should be drunk after meals. It is a kind of wine based on wine, edible alcohol or distilled wine, prepared with various flavoring materials and sweetened. The following briefly introduces the classification of liqueurs.

Classification of spices used

  • Fruit and flower wine
Flower and fruit wine is a kind of wine with flowers, leaves, roots, stems or fruit juice, and fruit fermented wine as the flavor source. Such as osmanthus wine and rose wine with obvious flower fragrance, and hawthorn wine with obvious fruit fragrance. The alcohol content of this kind of wine is 18~55% (v/v), and the sugar content is below 309/100mL.
  • Plant liquor
Plant liquor is a kind of liquor made with different liquor bases and plant medicinal materials as the fragrance source. It requires that all flavors should be harmonious, such as acanthopanax, lotus white, bamboo leaf green, etc.
  • Animal liquor
Animal liquor is a kind of liquor made from liquor or rice wine, and some animals with special curative effects or their skins, horns, hairs, bones, viscera and their products are used as fragrance sources or special ingredient sources. The medicinal materials used are allowed to have obvious special fragrance, but it is required that the fragrance is harmonious and the taste is mellow and soft, such as deer antler wine.

Different wine bases

It is a common method in China to classify the wine base used.
1 Mixed liquor based on yellow rice wine, such as white hair black bone chicken tonic wine in Jiangshan City, Zhejiang Province.
2 Mixed wine based on wine and fruit wine, such as ginseng wine from Jilin Tonghua Wine Factory.
3 Mixed liquor based on distilled liquor or edible alcohol, such as acanthopanax senticosus wine, bamboo leaf green wine, lotus white wine, Shiquan tonic wine, garden green wine, etc.
There are many kinds of mixed wines with different styles. It is difficult to classify them. The popular classification is to divide the mixed wines into three categories: Aperitif (appetizer), Dessert Wine (dessert wine), Liqueur (liqueur), as well as Chinese mixed wines and medicinal wines.
