Sugar content is the unit that represents the concentration of solids in the sugar solution. In industry, Brix (BX) is generally used to represent the sugar content, which refers to the grams of dissolved solids in 100g sugar solution. The sugar content is usually measured by the refractometer with sucrose percentage calibration based on the refractive property of sugar solution. If the tested solution contains other soluble non sucrose components, the indicated value cannot indicate the percentage content of real sucrose, which is called soluble solids content. Because sucrose aqueous solution has optical activity, its sugar content can also be measured by polarimeter.
