Our little home does not have any New Year atmosphere, but every day when we see the gifts piled up in the corner for our family, we will sigh: "New Year is coming!" "Going home"!
Compared with my leisure, my family is busy now, and the atmosphere of New Year is everywhere. In my hometown, most of the materials needed for the New Year are self-made. After the 23rd day of the twelfth lunar month, every family has to steam, fry, fry and stir fry all kinds of food for the first lunar month. Steamed buns mainly include steamed buns, flower rolls, jujube buns (hexagonal buns, followed by a jujube), dumpling (yellow steamed buns), flower buns (steamed buns of various shapes with white flour), etc.; fried buns mainly include fried oil chips of various shapes; and the food includes seed sprinkles, twist flowers, and oil cakes. Meat food also includes roasted meat, meatballs, and oily meat. In addition, we need to fry oil decanted tofu, fried potatoes and fried yams. These are all prepared during the month of December. Put them in a cool place, and invite relatives and friends to prepare various delicacies for the Spring Festival feast.
I have two days to go home. I don't have time to steam the steamed buns, so I made six kinds of food from the leftover meat in the refrigerator, such as roast meat, meatballs, oily meat, oily decanted tofu, fried potatoes and fried yams, to feel the festival atmosphere in advance!
Cooking process of streaky pork
Choose the streaky meat with skin. The meat should be separated layer by layer. One layer of fat meat and one layer of lean meat, fat and thin.
Rinse pork with clean water and cut it into large cubes with a knife.
Prepare Chinese prickly ash, anise, ginger and scallion.
Put the pork in the pot, add cold water to cover the pork, add the prepared spices, and cook for 15 minutes over high heat.
Chopsticks can penetrate meat, but turn off the fire when there is resistance.
Remove the meat.
Skim off the remaining soup in the pot.
Pour the soup into a small bowl and set aside.
Fried process of streaky pork
Put half a bowl of cold water into the pot, add 10 grams of rock sugar, and boil over high heat.
When the crystal sugar melts and the water evaporates, and the foam in the pan turns brown and yellow, immediately pour a small amount of hot water into the pan until the soup melts.
Dip the boiled soup color with a brush and evenly brush it on each surface of cooked pork.
Put more cooking oil in the wok and heat it to 80%.
Add the sugared pork and deep fry it.
Fry all sides of the meat until it is sauce red.
