Iran is located in the great plateau between the Caspian Sea and the Persian Gulf, with a history of more than 2500 years.

They are related to the term "Aryan" and should have been occupied by Indo Europeans in prehistoric times. After many invasions and changes of the empire, people living in this area and many neighboring territories were affected by it due to conquest and expansion.

The central plateau of Iran is actually a tectonic plate. The arid inland plateau contains two extraordinary deserts: Dasht-e-Kavir (Kav ī r Desert) and Dasht-e-Lut (L ī t Desert). These two deserts dominate the eastern part of the country and extend to Central Asia and Pakistan.

Iran's climate is one of the extreme climates. From the subtropical zone to the sub polar region, due to the extreme changes in altitude and rainfall, the national temperature range is as high as 130 degrees Fahrenheit (55 degrees Celsius) in the southwest and along the Persian Gulf coast to - 40 degrees Fahrenheit (- 40 degrees Celsius). Rainfall varies from less than two inches (five centimeters) a year.
Iran is a multi-ethnic and multicultural society. About half of the population of the country speaks Persian and its subsidiary language dialects as their main language. The rest of the population speak languages from Indo European, Ural Altaic (Turkic) or Semitic languages.


Food and diet
Food in daily life. As one might expect from Iran's geography, its food has reached a middle position between the preparations of Greece and India. It is more diversified, more spicy and subtle than Greek and Indian food, and uses more fresh ingredients.

Iranians eat a healthy diet of fresh fruits, vegetables and vegetables. Meat (usually lamb, goat, or chicken) is used as a condiment rather than as the core of a meal. Rice and fresh unleavened or semi fermented whole wheat bread are staple starches. The main drink is black tea. The main dietary taboo is the Islamic ban against pork.

Breakfast is a light meal, including fresh unleavened bread, tea and perhaps butter, white (goat's milk cheese) cheese and jam. Eggs can also be fried or boiled. Meat for breakfast is not common.

The main meal of the day is eaten at about one o'clock in the afternoon. In middle-class families, it usually comes from a plate of fresh vegetables - onions, carrots, fresh basil, mint, coriander, and cheese eaten with unleavened bread and white bread. The main course is chelow, accompanied by one or more stews or fruits made of meat and fresh vegetables. This stew, called khoresht, is similar to a mild curry. It centers on one core ingredient, such as eggplant, okra, spinach, quince, celery, etc. A particularly famous khoresht, fesenjun , It is composed of mutton, chicken, duck or pheasant. Onions, walnut powder and pomegranate molasses are cooked with sauce. In addition to its rice, it can also be boiled and mixed with fresh herbs, vegetables, fruits or meat to prepare a bowl.


Iranian national dish, called chelow kabab, consists of mutton slices marinated with lemon juice or yogurt, onions and saffron, which are roasted over a hot fire. Serve with grilled onions and tomatoes, topped with a piece of butter and a raw egg yolk.
