Fresh Turbot × 1
Scallion × 3 pieces
Garlic cloves × 2 pieces
Ginger × 1 piece
Cooking wine × 3 tablespoons
Sugar × 2 tablespoons
Salt × 2 tablespoons
Oil × 2 tablespoons
step :
1. Kill the Turbot! If you can't remove your internal organs and gills, you can ask the fishmonger to do it for you. Remember to wash the fish with clean water repeatedly, without bleeding water;
2. Use a kitchen knife to cut the fish diagonally for several times, and remember to make it deeper, so that the fish can be cooked quickly and the sauce can be more delicious;
3. Wipe the fish with salt and cooking wine, gently pat for a few minutes~marinate for 10 minutes;
4. Spread the sliced ginger and shredded green onion on the plate, put the fish on it, and steam it over medium heat for 10 minutes;
5. Pour out the water in the steamed fish dish and the steamed ginger and onion;
6. Put the chopped chives on the fish.
7. Remove soy sauce, sugar, and some water from the pan, mix them into soy sauce, and pour them on the fish over a low heat;
8. Heat the remaining shredded scallions and oil in a low heat for 8 minutes. The oil will smoke and the shredded scallions will turn yellow. Then pour the oil on the fish!
