Operation method
Fried pork meatballs: This is the most common meatballs. The pig meat filling is the most suitable one with three fat and seven thin ingredients. It is fragrant but not greasy. Deep fried white radish meatball: wash the white radish, scrape it into thin filaments, then put it into a basin, add some salt, white flour, eggs, five spice powder and other seasonings, and mix well. Then, in the same way as above, squeeze the meatball stuffing into the oil pan by hand and fry it slowly.
Fried beef meatballs: beef meatballs are generally smaller than pork meatballs, so that they can be easily boiled through when eating hot pot. Add starch, eggs, cooking wine, salt, onion and ginger water (or onion and ginger paste) into the beef stuffing, and mix these ingredients evenly. Then use the above method of frying pork balls to fry them.
Deep fried lotus root meatball: wash the lotus root, peel it, cut it into small pieces, use a mixer to stir the lotus root into lotus root paste, then put it into a basin, add eggs, a small amount of starch, salt, onion ginger water, five spice powder, stir it evenly, and fry it according to the above method of frying the vegetable meatball.
Fried traditional meatballs: the way to fry traditional meatballs in my hometown is to use a scraper to wipe out white radish shreds, washed soybean sprouts, mung bean noodles and white flour (1:3), onion and ginger water, five spice powder and salt, stir them evenly and then fry them. The frying method is the same as that of the above meatballs.
Deep fried sweet potato balls: wash the sweet potato, boil or steam it, peel it after cooling it slightly, then put the sweet potato in a pot, mash it into sweet potato paste with a spoon, then add a small amount of glutinous rice flour and appropriate amount of white granulated sugar, add an egg, stir it evenly, and then fry it according to the above method.
