There is no precise definition of refined vegetable oil and no corresponding industrial standard. The so-called refined vegetable oil is a general term, referring to processed vegetable oil.
What does refined vegetable oil mean
Refined vegetable oil refers to refined crude oil, removing harmful and useless impurities such as food and storage from crude oil to obtain finished oil that meets national quality standards. Through refining, the water content, impurities, acid value and peroxide value in the crude oil meet the national quality standards, and are not prone to rancidity and deterioration, which is favorable for storage. Cooking does not produce a lot of soot, and maintains the flavor of oil.
When using refined oil, it is not allowed to copy the experience of second grade cooking oil. When the oil pan smokes, the vegetables will be released. Because the smoking temperature of refined oil is 210-220 ℃, 50-60 ℃ higher than that of the second grade cooking oil. After smoking, the vegetables are easy to be fried, with color, fragrance and taste. In addition, refined oil is cooked oil, which can be directly used for cold dressing and soup preparation, and has no smell of oil. It is unnecessary to put food after smoking.
