1. Ingredients: 1000g flour, 25g alum, 15g edible alkali, 20g salt, 600g clean water, 2500g oil.
2. Put alum, alkali and salt into a basin, pound them with a wooden hammer, and grind them fine. Add 500g of water, and add flour after it is fully dissolved. Mix it evenly. Bring in the remaining water during the process of carrying Yong's hands and noodles, and tie it into a soft, delicate and strong dough. Brush a thin layer of oil on the surface, and wake up for 20 minutes.
3. Tie the dough once and put it on the oiled case, cover it with oilcloth, and wake up for 40 minutes.
4. Cut a piece from the awakened dough along the length, pull and press it to form a strip about 7cm thick and 7cm wide, and then apply a layer of oil to form a small strip about 1cm wide. Then stack the two pieces face to face, gently press them from the middle with the forefinger of both hands, and hold the two ends with the thumb and forefinger of both hands, then pull them into 32cm fried dough sticks for embryo.
5. Put it in oil of about 220 degrees and turn it over with chopsticks while frying until it swells and becomes light brown red
6. Out of the pot.
