Corn sugar boiling method:
1. Silty corn is selected. After cleaning and removing impurities, it is first crushed with a crusher to remove the corn husk and embryo, and then crushed into corn grains of millet size;
2. Washing and soaking: take 100kg corn husks, wash them twice with clean water, pour them into the soaking tank, and add 150kg water. Boil 200g amylase and 200g calcium chloride with warm water respectively, pour them into the soaking tank, mix them evenly, and soak for 2-3 hours;
3. Boiling: add 100kg water into the large pot and boil the water. Take the soaked corn out of the soaking tank and pour it into the boiling pot for boiling;
4. Fermentation: add about 90kg cold water into the pot and stir evenly. When the temperature of corn paste drops to 60 to 70 ℃, add amylase that has been boiled with warm water in advance and stir evenly, then transfer the corn paste to the fermentation tank. Fermentation at 60 ℃ for 2-3 hours;
5. Filtration: after fermentation, squeeze and filter the feed liquid with a fine cloth bag. The filtered liquid is sugar, and pour the sugar into the sugar boiling pot;
6. Boiling: Heat the sugar liquid to boiling with high fire. When the boiling thick juice appears fish scale, boil it with low fire. When the concentration reaches 35 Baume degrees, stop heating immediately. After cooling, you can get sugar boiled from corn.
