Ingredients: streaky pork, dried yellow sauce, sweet flour paste, wine, rock sugar, scallions, garlic, ginger, anise, handmade noodles, vegetables, etc.
1. Cut or boil baby vegetables, cucumbers, radishes, bean sprouts, green beans, soybeans and other side dishes, and make them into dish codes for use. Soy beans are soaked in advance and then boiled.
2. Dilute a bag of dry yellow sauce with warm water and then mix it with a bag of sweet sauce (the ratio of diluted yellow sauce to sweet sauce is 8:2, about one bag each).
3. Pour the bottom oil into the pan, twice as much as the usual cooking. Heat the oil and add ginger slices. After the fragrance comes out, add chopped garlic, turn down the heat, and then add chopped green onion.
4. Add the diced pork and stir until the oil is out. There is lard for stir frying meat in the pot. Pour the mixed sauce into the pot to stir fry the sauce.
5. When the sauce is fragrant, pour in hot water, add diced meat, cooking wine, rock sugar and anise.
6. Boil it for about an hour. During this period, it should be turned over from time to time to prevent the pan from being burnt. Put some chopped garlic in the pot.
7. Take out the cooked noodles and mix them with your favorite side dishes. The noodles can be dipped in cold boiled water, suitable for summer.
