1. Ingredients: one and a half jin of crucian carp, some citronella grass, some pepper, some salt, half lemon, some bread bran, and two corianders.
2. The head and viscera of crucian carp are removed, the scales are left, and the fish meat is cut into sections.
3. Salt, pepper, lemon juice, coriander, onion, ginger slices pickled.
4. Soak citronella grass in water, cut citronella grass into sections and fry.
5. Deep fry breadcrumb for standby, and fry fish fillets with breadcrumb.
6. Deep fry three times to make it crispy. In the bottom oil of the pan, stir fry Chinese prickly ash first, and then dry the chilli. When the fragrance comes out, add citronella, bread crumbs, and fish fillets, and stir well.
