1. 800g portunus crab, 3 garlic cloves, 3 pieces of ginger, 5g chopped green onion, 1 tablespoon of spicy hot sauce, 1 tablespoon of oil, 5 dry chilies, 1 tablespoon of soy sauce, 1 teaspoon of sugar, 1 teaspoon of salt, 2 teaspoons of cooking wine, and 2 teaspoons of seafood sauce.
2. Wash and cut the swimming crab into pieces after removing the gill white and burrs.
3. Put oil in the pan and saute garlic, ginger slices and dried chilli until fragrant.
4. Add spicy hot primer, stir fry gently, and then turn the fire to stir fry the swimming crab for 2 minutes.
5. Stir in soy sauce and seafood sauce.
6. Add salt, sugar and cooking wine and continue to stir for about 3 minutes. Finally, add chopped green onion and stir well.
