Bullfrog meat is fresh and tender, and there are many fans. However, there is a saying on the Internet that "bullfrogs may carry more parasites than you can imagine, and a little carelessness will slip into your throat together with delicious food". So, will eating bullfrogs infect parasites?

Ruan Guangfeng, deputy director and associate research librarian of Kexin Food and Health Information Exchange Center, said in an interview that eating bullfrogs to infect parasites usually requires two conditions: wild bullfrogs, which are not cooked. Therefore, as long as you buy it from formal channels, cook it thoroughly, or eat it in formal restaurants, there is generally no risk of parasite infection.

Ruan Guangfeng explained that some bullfrogs do carry parasites, such as Taenia mansoni, which is often found on wild bullfrogs. The larval sparganum of this worm can parasitize on people, and it constantly travels, invading the eyes, face, internal organs, even the brain and other parts. It can form lumps and nodules under the skin or muscles, and can also cause serious headache, conjunctival bleeding, eye protrusion Epilepsy, abdominal pain and other symptoms, even blindness, life-threatening. Sparganum can remain dormant in the body for many years, and sometimes it is discovered after several years. If you just accidentally eat wild bullfrogs that are not thoroughly cooked, people may be infected with parasites.

Therefore, if you are dining out, you should choose the artificial breeding bullfrogs in formal hotels, because the formal breeding bullfrogs are much safer than the wild bullfrogs. When eating bullfrog, whether it is roasted bullfrog, boiled bullfrog, dry cooked bullfrog or bullfrog hotpot, it should also be fully heated and cooked. Ruan Guangfeng reminded that heating thoroughly is the most effective way to kill parasites. Some people choose to eat raw when they eat aquatic products such as bullfrogs in pursuit of delicacy, but the risk of infection with parasites is very high. In addition to bullfrogs, fresh water fish and shrimps such as raw fish (fresh water fish fillet), snakes, snails, etc. may also carry parasites. At present, the most effective method is to prevent parasite infection of fresh water aquatic products, and eat them after fully heating and ripening.

If you are cooking bullfrogs at home, it is recommended to buy artificially bred bullfrogs in regular supermarkets or markets instead of the so-called "green and original" wild bullfrogs advocated by some mobile stalls. At the same time, when cooking bullfrogs at home, attention should be paid not to grasp bullfrogs directly with hands, especially when there is a wound on the hands, so as to prevent the parasite sparganum from entering the body through the wound and migrating to human eyes, subcutaneous tissues or brain, kidney, lung and other organs, causing serious symptoms.

At the same time, when you are making bullfrogs and other aquatic products at home, you must pay attention to standard operation, separate raw and cooked products, and prevent cross contamination. For example, the knife and chopping board for cutting bullfrogs should be separated from others, and a separate basin should be used for washing bullfrogs.

It should be noted that vinegar, soy sauce, horseradish sauce, white wine, etc. cannot completely kill the parasites that may exist in bullfrogs. Do not think that you can eat raw after soaking in these sauces.

In addition, from the perspective of dietary balance, no matter how much you love the delicious bullfrog, it is not recommended to eat too much at one time. Our country's "resident diet pagoda" recommends eating 120-200g of animal food every day, and eating aquatic products twice a week. The recommended daily intake of livestock and poultry meat is 40g to 75g, and the recommended daily intake of common aquatic products such as fish, shrimp, crab and shellfish is 40g to 75g. Diversified food intake not only helps to absorb more balanced nutrition and promote health, but also avoids the risk of excessive intake of possible hazardous substances due to eating only one kind of food.
