Fuzhou Yongtai: "Persimmon" works well, and "getting rich" fruits

Recently, in Guangrong Village, Wutong Town, Yongtai County, Fuzhou City, farmers were making persimmons. Golden persimmons were spread around the village, as if the earth was covered with a layer of sweet "golden armour".

The persimmon processing factory is also busy. People are busy selecting fruits, digging stalks, peeling, and turning over the persimmons on the shelf. It is reported that the persimmon skin contains a lot of tannin, which is not only astringent in taste, but also bad for your health. Therefore, the skin should be removed first and then put on the shelf to dry in order to remove excessive tannin.

"We peel the fresh persimmons picked from the trees, and then put them in the sun to dry after peeling. The color of the persimmons made in this way will look better and will not be easy to blacken." said the planter Wei Jinying, "After the persimmons are dried for about three days, we will start to green them. After a little pinching next to the persimmons, we will continue to dry for four or five days, and then the persimmons will become soft into persimmons. After they become soft, we will break up their fiber, so as to better promote the sugar generation of the persimmons and improve the taste of the persimmons."

As the drying time increases, the plump persimmons become smaller and smaller, and gradually become "wrinkles". The dried persimmons are round and plump. From the outside to the inside, they are soft, waxy and honey flowing, making people salivate.

"The picking period of persimmons is from October to December. Generally, about 50000 jin of persimmons can be made a year. Now, one jin of persimmons just came into the market and can sell for about 15 yuan. Many regular customers will book with us in advance, and the sales are also good," said Wei Jinying.
