Tea belonging to Beijing people is scented tea, especially jasmine tea. The scented tea, which is scented by jasmine, is also called fragrant tea in the morning. Zhang Ailing wrote a famous novella, Jasmine Fragrance, about this kind of tea.

There is some truth in southerners' belief that Beijingers cannot taste tea. In the past, Beijingers didn't drink Kung Fu tea with a lot of small plates and bowls, not even green tea like Longjing and Biluochun. Even if you drink Longjing, you should sprinkle some fresh jasmine flowers on it, which is called "dragon eye fish". In the eyes of southerners, this is to rob the real taste of tea with the fragrance of flowers, which is simply unreasonable. However, Beijingers have their own reasons for doing so. In the past, people in Beijing used to drink well water. The water was hard and there was not much sweet water. It was a waste to make green tea with this water. And the fragrant jasmine can make the originally bitter tea suddenly become sweet, so it is favored by Beijingers.

Many old Beijingers drink only scented tea. I think only scented tea is considered as "tea", and even jasmine flowers are called tea flowers. After getting up early and washing up every day, you should first make a pot of tea. You should drink the tea thoroughly until your back sweats slightly and you feel comfortable before you go out for breakfast. This was once a unique way of life for Beijingers. Unfortunately, fewer and fewer people like this kind of tea, so many young people don't know what scented tea is. When I went to a restaurant for dinner two years ago, the waiter asked, "What kind of tea?" I said, "scented tea.". After a while, they brought up the prepared chrysanthemums, which made me unable to laugh or cry.

The scented tea can also be divided into three or six classes, such as "Mengshan Cloud", "Double scented Plum Blossom", and "Iron Leaves are generous", which are now invisible. In recent years, "jasmine big pekoe" and "small leaf double fumigation" are more popular, and the taste and price are quite different. The best scented tea must be made from the best tea germ, half containing and half releasing jasmine petals from Fujian in July and August after several scents and extracts. In midsummer, when the temperature is high and the light is sufficient, the jasmine bud is the most plump and the fragrance is the strongest. The scenting system with such flower buds can make tea infused with flower fragrance, and the flowers can increase the tea color. The tea and flowers are fully blended, and the color and fragrance are integrated. Make a cup of boiling water, hold it for a while, open the lid, and the room is full of fragrance. A few white buds on the bright and clean tea soup stretch out and disappear. A wisp of fragrant tea soup is refreshing, which not only keeps the tea fresh and refreshing, but also highlights the fresh fragrance of flowers. After drinking a cup of tea with a strong taste, the soul will be refreshed and not drunk!

Beijingers have been under the imperial city, intoxicated with the fragrance of flowers and tea, and calmly read all the changes in the world for hundreds of years.

There is a special kind of scented tea called Gao Moer, or Gao Suier. The high end is very cheap, which is affordable for ordinary people. It can be said that it is a good and inexpensive enjoyment. However, it would be wrong to think that Gao Mo'er is a leftover from making scented tea or a leftover from the tea shop. Gao Moer is a kind of scented tea that is made by mixing the broken leaves of various scented teas together and then stir frying them again. There are also grades of high end products. If you carefully observe the high end products, you will find that they are actually tea cores and buds. It can be said that Gao Moer is a collection of the essence of various scented teas. Therefore, Gao Mo is the most fragrant scented tea. However, Gao Mo'er has a weakness, that is, he can't help but brew. He puts a handful of them into the cup and brews them for three times at most. For the first time, the fragrance was so thick that it could jump into your nose, and really ran to your heart. When the water was poured again, the fragrance had faded a lot, and the tip of your tongue felt slightly bitter. If you drink the third cup, it will be as plain as water. Therefore, Gao Morer should drink at most two cups, which is in line with Miaoyu's Tea Classic in A Dream of Red Mansions: "One cup is for taste, and two cups are for thirst quenching fools..." Some people say that drinking Gao Morer can be addictive, but it is not exaggerated at all. The reason is that Gao Morer has gathered the strong fragrance of many scented teas in one furnace, and the boiling water makes it so strong that it makes people feel drunk, especially strong. Even the best tea can't produce this effect. As for brewing, just put more tea back. Therefore, those who drink high tea with a bowl will continue to follow the tea in the bowl. At the end of the drink, tea is more than water. (From Xinhua Daily Telegraph)
